Gellan Gum-HA is a kind of high acyl gellan gum, in the food industry, it is mainly used a excellent suspending / gelling agent due to its outstanding fluid gel properties. Typical use level: 
In the milk and vegetable protein drinks, the gellan gum-HA can make excellent suspending effect at very low dosage—as lower as 0.02~0.05%, it can also be combined with other hydrocolloids to decrease the gellan gum dosage further.
